Interesting about the “homogenized” vs “whole milk”….I’m in Canada, and have never seen milk with 100% milk fat…wouldn’t that be pretty thick? Whipping cream is 35% fat and that’s the highest I’ve ever seen. I’ve also heard “homo milk” called “whole milk” in the States. Our “homo milk” is, I think, 3.5% fat. None of our milks are ‘chunky’ and only 3.5% fat milk is labelled “homogenized”.

Whole milk isn’t 100 percent milk, its 100 percent milk fat. I’m not too sure on the specifics but whole milk is in no way like that stuff straight out of the udder.
If you look at the flowchart posted above, butterfat is the only thing with a fat content of 100%. I’m Canadian and the homogenized milk I see in grocery stores is 3.25%.
